Consider the Neraphim (Planar Handbook pg. 12) who is an Outsider. If that character was of evil alignment would that give them the evil subtype? How does one gain the evil subtype? Are there any playable races with the evil subtype?

The simplest way to gain the Evil subtype is via a ritual in Savage Species. Just the alignment is not enough.

Tieflings are "usually Evil" outsiders - but don't have the subtype.

Somebody with the evil subtype doesn't die go insane from having an overload of taint, though that's probably the 'cheese' end of optimization.

This. Looking at Tainted Scholar cheese, as well as Fiend of Possession entry requirements.

Another reason might be - to take one of the three "Fiend Of" PRCs from Fiend Folio.

In point of fact, even if a demon or some other kind of fiend managed to somehow stop being Evil in alignment, they would keep their [Evil] subtype (and still count as being Evil for the purposes of spells and other effects). So it's more based on what kind of creature it is than their individual alignment.

No, rituals or being of the right race, yes.
