Saw the movie labyrinth recently and thoughts that would be a really good mega dungeon design. But seeing as there’s over 30 years between it. Is there a “labyrinth” mega dungeon already made?

If not how long should a mega dungeon take to complete. Are they designed to be the game?

At what point is it just “a long dungeon”

This is an excellent resource if you wish to design your own mega dungeon. http://theangrygm.com/category/megadungeon/

Megadungeons can be designed to be the focus of a campaign, but they can also just be the "tentpole". The everpresent, massive dungeon that the players can come back to repeatedly. As for length, it really depends on who you ask. To some, megadungeons are just big dungeons, 7+ levels and hundreds of rooms. But to others, a megadungeon is quite literally endless, with the DM always adding more levels and rooms.

If you want to run one in 5e, theres only one that I know of thats actually for 5e, converted from Labyrinth Lord, and thats Barrowmaze. It obviates level design for sprawl. Theres only 1-2 levels but they are BIG. The farther you trek in the more dangerous it becomes. They feature undead primarily, but in very fun and creative ways.

There is also "Maze of the Blue Medusa" which is system neutral. This one is super weird, beautifully draw, and just very unique. It oozes style and creativity. Its also quite large as well.

You could also plunder 3e for megadungeons that would make for easy conversions. I recommend Tomb of Abysthor.

Dead easy to convert 3E megadugeons on the fly. Monsters are largely swap in 5E ones for the 3E equivalents (some encounters might need minor adjustment, and named PCs can be easily converted by slapping the spellcasting trait or Leadership or whatever on top of an existing monster. You can also make them 'advanced' monsters by simply adding +2 to AC, Saves, Skills, to Hit and DCs, increasing HP by 50 percent, and increasing all damage die by one step, and bumping the CR up by 2).

Skill DCs are extrapolated with DC 10 being substituted for 3E DCs of less than15, DC 15 for DC's in the 16-24 range, DC 20 for DC's in the 25-34 range, DC 25 for 35- 44 and DC 30 for DC 45+ (or thereabouts).

You could also run ToTYP as one big dungeon with minimal work.
