So if Dragons are no longer spellcasters, how is it that Sorcerers (who only have a faint touch of Draconic blood in their lineage) manage to be powerful spellcasters based on that Draconic bloodline?

In prior editions, this made sense, because Dragons were also sorcerers. In 5e? No longer (even the alt rules in the DMG are really weak-sauce to explain the power a humanoid sorcerer ends up getting).

Probably because Dragons are innately magical beings. They don't need to be able to cast spells to have magic running through their veins.

Which is why Draconic Bloodline Sorcerer has access to magic.

I‘m not familiar with many dragons, but a certain one from a certain published campaign is a charisma caster, iirc. I can’t think of them casting by musically pulling the weave as they please or having gotten their magic from a patron, so at least this one is likely a sorcerer... why not the other dragons, too?

Maybe it's the mixture that kickstarts the whole thing? Humanoids are pretty adaptable when it comes to magic, so even a bit of that supernatural blood can spark the humanoid to be a sorcerer.
