Would the blindness spell affect a beholder? Would it blind the main eye and all of its eye stalks?
Would the main eye just do the anti-magic thing and not be affected?

The Eyes Rays require a target it can see, the antimagic field and bite do not. So only the rays are disabled with blindness.

If you're looking for an easy way to kill beholders, just use the Darkness spell. The beholder can't see you when you're inside the Darkness, so it can't target you with its eye-rays. If it shines its anti-magic eye on you to disable the darkness, it can't target you because you're in an anti-magic zone. It's a lose-lose situation for the beholder.

It still has a few options including biting you or throwing things at you with its telekinesis ray (maybe), but it becomes an order of magnitude less deadly. At any rate, it seems to be what you're looking for.
