So I get the Find Familiar ritual and I can have a familiar off the list, but it's a celestial, fey, or a fiend, my choice.

Is there any difference but flavor?

Off the top of my head, I know certain spells like Detect Evil and Good and Protection from Evil and Good target specific types of creatures.

There's one undead monster in Volo's (bodak?) that has a damage aura that hurts everything near it except undead and fiends. Oathbreaker paladin also has an aura that specifically targets undead and fiends.

Mostly, though, I'd say it's probably flavor.

While nobody propably cares about celestials or fey, good luck explaining why the raven on your shoulder pings as a fiend on the paladin's evil-o-meter Divine Sense.

The only option with real negatives is a fiend because they can be damaged by holy water.
