Other way to change your familiar:

Spell:


Animate Dead Familiar: (archive.wizards.com/dnd/article.asp?x=dnd/sb/sb20011209a) Makes your dead familiar undead.
Elemental Familiar: (archive.wizards.com/dnd/article.asp?x=dnd/sb/sb20011109a) instant duration; Turns your familiar into a tiny elemental
Planar Familiar: (archive.wizards.com/dnd/article.asp?x=dnd/sb/sb20011020a) Turns your familiar into a Celestial/Fiendish/Axiomatic/Anarchic creature. (Weirdly its a cleric spell but it can only be cast one your own familiar, so you need to either UMD a scroll or use Limited wish.


Note: All three spell are 3.0 spell.

Feats:


Construct Familiar (#280 p62): Turns your familiar into a construct
Undead Familiar (#280 p62): Turns your familiar into an undead.
Token Familiar (#280 p62): Turns your familiar into a little item and back at will
Shadowform Familiar (CoR p22): Turns your familiar incorporeal, Krinth only
Stitched Flesh Familiar (LM p30): Turns your familiar into an undead
Shadow Familiar (ToM p138): Grant you a familiar with the the dark template or give it to your already existing familiar, Need Shadowcaster 3rd level



Prestige Class:


Alienist lvl 5 (CAr p21): Grants pseudonatural template to your familiar
Bonded Summoner (MH p16): Replace familiar with an Elemental, starting at medium size and ending as an Elder Elemental.
Fleshwarper (LoM p189): Change your familiar type to Aberration, and give him up to four ability.
Fiend-Blooded (HH p102): Grants fiendish templates to your familiar.
Nar Demonbinder (UE p25): Grants an Imp or a Quasit familiar as with the improved familiar feat.
Arcane Hierophant (RoTW p108): Grant the ability of a familiar to your animal companion.

This is a lot messier than I thought when I started. example: the mouse familiar from the DMG p.203. When you start calculating skill points, after subtracting all of the size and feat modifiers, you get this: balance 8, climb 15, hide 4, move silently 12.

Granted, there is no text telling you to use dex for climb checks, so lets assume that's there, because alot of animals have that.

Most animals have racial bonuses to stuff. About 4 of the above skill ranks are legal for a 1 HD mouse. but which 4? The rest would be covered by racial bonuses. The mouse probably has the rat's racial bonuses, but it doesn't say so. and the errata for the DMG skips page 203.

The problem isn't confined to the DMG. The MM breaks down when it comes to tiny vipers too. They forgot to allow vipers to use dex instead of str for swim checks, so instead of listen 1, spot 1, swim 2, you get this:

Listen 1, spot 1, swim 8

It's like a wild west of skill ranks out here.

I always wished skiurids had been added to the improved familiar list. It would have been nice to have the option for necromancers.

Some of the other "Complete" books had some options as well. I know that there's some in the Complete Warrior that you do not yet have on your list (Winter Wolf, for example).

Demonologist from Book of Vile Darkness gets a Quasit Familiar (in a quite epic way, however just remember you have an empathic link with your familiar)
Diabolist from Book of Vile Darkness gets an Imp Familiar (in the same epic way)
Arcane Heirophant changes your familiar quite a bit (essentially combining it with your animal companion) *Does it still count as a familiar for abilities like Shadow Familiar?

Is it wrong to bump handbooks/lists? Regardless, do any familiars besides the raven talk or have other special abilities? Off the top of my head, the parrot also talks, unsurprisingly.

Alas no not many famiilars have the fun sort of Special the ravens do.

Planty capable of being mesingers that will not atract attention on the way, but sadly only the parrot and Raven can talk.

Though familiars like the monkey should be able use non-verble comunication like drow-handsin or thife sine no problem.

Spell Sovereign has the option for Living Spell familiars, so that would probably quintuple the list at least if you went through all potential options there.

Also, anyone with a Mirror Mephit familiar can get Divine Rank and assign anything as their familiar.
