If their creature type is 'Humanoid', I reckon that it would. Even if they can shapeshift.

I'd personally also rule that they would stay under its effects, even if they shift into animal form later.
That might be a 'Beast' creature type, but the magic has already taken effect. No reason to have it suddenly poof out of effect.

I don't think so, but it depends on how wererat is labeled - humanoid or monstrosity (or aberation or w/e). If it is humanoid in the mm then yes. Otherwise, even if it looks human, no.
