Sometimes, people like to play as children. Peter Pan, Harry Potter kind of characters. However aside from Urchin, most backgrounds dont fit children, so if you could make a child or re haul a previous background for children, what would you do?

Outlander and Acolyte work fine as they are. There are are children in barbarian tribes and monasteries.

You could refluff the Sage background as Apprentice, and make the special feature "You have a master who taught you magic. If you contact him with a question, roll percentile. 1-50, he ignores you. 51-75 he sends a message via familiar chastising you for wasting his time. 76-100 he sends you a message via Sending providing a detailed answer."

For the child version of the soldier background, just use Haunted One.

I dunno, I think most work fine for children PCs.

Instead of saying you are a noble or an entertainer, you can say your parents are/were and you were raised as such. Tragedy hath struck, and as of shortly before the game starts- you're on your own.
