I know that Splash deals damage to a central target and adjacent targets, but when an attack line says "2-square splash", what does that mean?

It's not defined. Presumable RAI is adjacent targets + targets adjacent to them (or in other words splash is 3x3, while splash 2 is 5x5).

That is an FAQ and errata for the game. I believe it used to be hosted on the WotC site, until they changed things. a few years ago. At any rate, it's got burst, splash, and cone templates, and gives some info on them.
