so lets say i have four arms and have a one handed weapon in each. would i get an offhanded attack with all three other arms or just one

with this feat (http://www.d20pfsrd.com/feats/combat-feats/multiweapon-fighting-combat/), yes. Otherwise, you get one off-hand.

It also depends on how you get your extra hands. Many of the extra hands options explicitly say you can't use them for attacks.

Reread the "Normal" entry for that feat.
Just having 3+arms entitles you to an off hand with each extra arm*. Granted, due to penalties you're going to want that feat anyway.

Also note that there is no "Improved Multi-weapon Fighting" feat. So you never get iteratives with your off hands.


*Assuming your extra arms are useable for extra attacks anyway. Alchemists need not apply.
