What are the melee defensive abilities that players should look for? Stuff like evasion, mettle, and uncanny dodge all seem pretty good, but are they the only ones out there? What are the best ways to get them from dipping levels? What's the easiest way to gain a miss chance, like blur?

Ring of Evasion -> Starmantle Cloak.

The ironguard spell and it's lesser version can be useful depending on what you fight.

Any thing that gives DR, especially when stacked with fast healing.

Hardness is like a DR, just better: it protects vs all forms of damage (except those which are explicitly ignore it); acquirable from a race, template, or via magic

what is your character's build? that'll let us know what they have natively through class features or spells or what have you and what needs to be supplemented with equipment.

evasion, mettle, etc are certainly all nice, but they're not mandatory for all sorts of characters. best way for miss chance is a cloak of minor displacement.

Dipping into Battledancer gets you charisma to armor class, while dipping monk gives you wisdom to armor class. Dipping two levels into paladin adds charisma modifier to saving throws and two levels in rogue or monk gives evasion.

Those are the most famous dips, I reckon.
