I'm building out of pleasure, a Gnome Shadow Illusionist, and i'm wondering, could i take at first level the Gnome Illusionist Variant, Focused Specialist Variant, Combat Wizard Variant, Shadow Shaper Variant and Illusion Mastery Variant all together ?

Also, does Illusion Mastery counts as Spell Mastery to get Signature Spell or Uncanny Forethought?

Thanks in advance

Pretty sure those variants will all work together.

You are giving up bonus feats, trading scribe scroll for a fighter feat, losing 3 spell schools, losing 1 spell slot per spell level per day, gaining 2 illusion spell slots per level per day.

Thats a lot of variation, but I think I got it right.

As for illusion mastery = spell mastery, technically no since it doesn't grant the feat. It only treats certain spells as if effected by the feat.

You can combine all but one of those variants. Combat Wizard and Shadow Shaper both trade away bonus feats, so they are mutually exclusive.

Illusion Mastery will not count towards the prereq for Signature Spell or Uncanny Forethought. If you do take Spell Mastery though, any illusion spell is a viable candidate for those feats because of Illusion Mastery.
