Level 11 Tiefling witch with a +5 Int bonus.

Between getting bonus slots for my intelligence bonus, I have lost track of exactly how many spells I should know, and how many I can cast a day.

It's basically the official table, but my DM told me with my intelligence modifier it is a few more - I just can't put a finger on how many.

Then I have learned extra spells from defeated wizards spellbooks (and stuffed them in my familiar).

I think I know (spells in familiar) 45 spells in total at this stage. Does that sound right or waaaaay off?

At first level, you have all L0 spells and 3+INT modifier L1 spells. You add another 2 free spells to your familiar every level afterwards. You can purchase more spells, in a similar manner to how a wizard inscribes new spells into his book.

If you're asking how many spell slots you have, that's easy: take the base witch table (http://www.d20pfsrd.com/classes/base-classes/witch) and combine it with the bonus spells table. (http://www.d20pfsrd.com/basics-ability-scores/ability-scores/#Abilities_and_Spellcasters) This gives you the following:

0th: 4 base, 0 bonus
1st: 4 base, 2 bonus
2nd: 4 base, 1 bonus
3rd: 4 base, 1 bonus
4th: 3 base, 1 bonus
5th: 2 base, 1 bonus
6th: 1 base, 0 bonus

For a total of 28 spells/day.

However, if you're instead asking how many spells you've learned/stored over your career, there's not much we can do but retrace all your steps. That includes asking what your Int bonus was at 1st-level, your feat choices, what archetype you're using, and exactly how many spells you learned from all those wizards you vanquished. The potential for this to vary is much wider.
