If you have a creature like a werewolf for example which can attack several times using different attack types (bite and spear/claw in this case) what kind of attack would they make if they are under the effect of a haste spell and can make an extra attack? Just pick one randomly?

DM's choice. Just not multi attack, or anything that is not weapon attack.

Logically they'll use the option that seems the best to them at the moment. For example: Monster A has a spear and a venomous bite. The bite tends to deal more damage to humanoids, but if they're fighting something they can identify as being immune to poison, they'd probably use the spear.

Most monsters would do for the biggest damages/the most useful effects if they're any smart.

If you look at the stat block each attack is listed and so long as it is a weapon attack you can choose any individual one that the situation allows (if a weapon attacks requires a trigger then it would only be used if that trigger has been triggered or if both hands are full then you may have to use a bite rather than his claw attacks or some such). The most important thing is that multi attack is off the table but for the most part the constituent attacks of the multi attack are generally available.
