Would an insanely lethal, hack-and-slash game set in an enormous dungeon work? It would probably be a bit easier with 4-6 people, but I don't think getting at all attached to a character is a good idea.

Try the World's Largest Dungeon (http://www.amazon.com/Largest-Dungeon-Dragons-Fantasy-Roleplaying/dp/1594720290) module.

That'd certainly fit with the NetHack/Rogue premise.
In all honesty, I'd play.

Luckily, the purpose of this thread was to gauge whether a PbP game like this would be feasible. Do you have an account on the linked sight?

I'm almost completely sure I'm going to run it there; they have a lot of useful tools, especially for DMs.

Actually, it isn't hack-and-slash either.

well, a PbP in a game involving many many fights à la Nethack could take ages since rounds of have a tendency to be spaced out over a long IRL time.
