After considering the useful advice of the community, I have been theory-crafting various Fighter builds. My favorite, of which, I will include below.

Variant Human
Battle Master Fighter 1-20
Custom Noble

Ability Scores
Str: 16
Dex: 8
Con: 16
Int: 8
Wis: 15
Cha: 8

Feats
Great Weapon Master
Polearm Master
Resilient (Wis)
Sentinel

Features
Fighting Style (Defense/Great Weapon Fighting)
ASI's to max Str+Con

Equipment
Glaive/Halberd
Chainmail->Plate

Skills
Acrobatics, Athletics, Insight, Investigation, Perception

My plan is tank and deal damage while using maneuvers like precision attack and trip attack for increased GWM accuracy and advantage. I will theoretically be able to use my reaction each turn if I position myself wisely. I realize that it will be difficult for me to fight anything out of my reach--which concerns me. What do you think? Can I improve it? If so, how?

Yeah, that's a solid build. With stats like that, how you gonna role-play him? I'm thinking maybe a grizzled, book dumb but street smart kind of veteran character; that's what immediately springs to mind for me, at least.

Biggest downside is probably going to be that negative Dex; Fireball is gonna hurt something fierce.

The average Human NPC has 10 in every ability score so he's only a little less smart than they are--it shouldn't be too hard to roleplay.

Oh, I totally get that; it was more a curiosity than a criticism.

I like it

I would take the feats in this order though

Level 1 PAM
Level 4 +2 Str
Level 6 Sentinel
Level 8 Res(Wis)
Level 12 +2 Str
Level 14 GWM
Level 16 ???

Yes GWM is the least important feat of the bunch IMO
