If you had a monk South shadow step with magic initiate and the familiar spell could you shadow step through walls by seeing through the eyes of you familiar?

Sure, find familiar allows you to see through their senses. Shadow steps require that you see a place. Seems like they would work well together.

Do it to much and your DM may splat your familiar though.

It should work if you can say, look through a window.
In this case, you're eschewing the window in favor of getting your Familiar beyond the wall so you can Shadow Step out.

Sounds like it's a bit of a hassle to pull off consistently, so it'd be alright at my table.

Just be prepared to resummon your Familiar if enemies would reasonably swat the bug they see, leaving you with just passing 'through' windows.

It would work outside of combat for scouting around, etc...

The action economy gets wonky in combat. Find familiar says it takes your action to see through its eyes, you can then shadow step as your bonus action, but the advantage on next attack only lasts until end of the current turn and you wouldn't have an action left to attack with.

Would be a kind of cool emergency exit from a combat though.

Stat requirements for multiclassing might make it a bit of a pain in point buy games, but a three level warlock dip could get you an invisible familiar to play this trick with, along with devil's sight, two casts of darkness per short rest, and a first level patron feature.

I've done the same trick with Misty Step many times. Works because sensing through familiar is an action and the teleport is a bonus action.
