So I am making a Human Cavalier with the Undersized mount feat. My question is this: which animal is capable of carrying a human in full plate armor plus other gear into a fight without hurting it under the weight?

There is also the heavyload belt that triples carry weight. Because muleback chords add 8 effective strength and the belt triples actual carry weight they stack.

So, assuming a creature starts with a strength of 7 they can carry 600lbs as a heavy load. Something with a 14 strength can carry up to 500lbs as a light load. If you are careful with your packing that can carry you+armor+weapon.

Get an exotic saddle. Mount the wizard.
