Is there any ability that monsters have, outside of sundering a weapon that they use to break weapons.

If there isn't one, how would I go about creating one?

Gray Ooze and Black Puddings have an Acid (Ex) ability that dissolves (most) weapons that hit them if you fail a save.

Nightwalkers. They have a special ability to grab a weapon with a disarm check, then they get to crush the weapon to destroy it - DC34 Fort save to resist, but at this point it is an unattended item and has to use its own save not the character's...

(If you feel really mean you could argure that at this point it is attended - by the nightwalker who would need a nat 20 and can voluntarily fail the save.)

Well, Caryatid Column (Fiend Folio) with it's Break Weapon (Su) is a classics for such things

If you're OK with non-WotC books, Player's Guide to the Sovereign Land have Tough as Nails feat:
Weapons suffer half the damage they deal to youRequired Con 13 and two other feats - Shock Resistant and Undying (both are from the very same book, and the latter is a prerequisite for the former)

I like that second part where the weapon takes the half damage it deals, how do you figure out weapon health?

If you're looking at a nonmagical weapon, then any Dragon with 2nd-level spells can have Shatter, which works. There might also be some monsters that have it as a spell-like ability.

Also, if you OK to delve into the Immortal's Handbook, then - in the Epic Bestiary Volume One - Titanium Dragon gets Weaponbreaking SQ (Fort save 10+1/2HD or shattered) since the Wyrmling age (29 HD, CR 29); and in the Ascension -Weapon Breaking SDA (weapons which are failed to penetrate a deity's DR are shattered)
