I'm concerned if there is a distance problem with a simulacrum getting stabbed and bleeding as a normal creature then after it gets a certain distance away or especially if it dies the dried blood turns to snow and melts.

Is this a decision up to the DM?

I would say it doesn't bleed. It looks like what you duplicate, but it's still magically animated snow and ice as far as I can tell.

Edit: I feel this interpretation is reinforced by the fact that it's an illusion spell and not conjuration (creating a creature) or transmutation (changing the materials into a creature)

It drips warm, blood-flavored corn syrup.
