I'm thinking about creating a warlock hexblade 6 / phoenix sorcerer 14 character as a future character for one of my games, I'm a little stuck on racial options though, I was thinking maybe aasimar because tbh I do love them but was curious if the angel guide and the hexblade would come into conflict at all, also what would be the best way to maximise my AC with this build

You can always flavor the Hexblade as being derived from your angelic guide, or make the guide be the patron itself. They're both vaguely defined otherworldly powers, no need for them to be separate.

AC is simple enough. Hexblade gives you medium armor and shield proficiency. You only need 14 dex for maximum AC. Juggling that with a solid Constitution and Charisma can be practically done through Point Buy.

for the express point of maxing ac look into the medium armor master feat if you really want to
