I’m trying to find a list of all possible, official classes and races for 5e from all the sourcebooks. I’ve only managed to find 2 new classes from the Unearthed Arcana book (Artificer and Mystic) Help would be appreciated!

I'm not sure of that, but it's definitely worth noting in the above list that Aasimar and Eladrin from DMG are both different than their later printings in Volo's and Mordenkainen's (respectively).

I think they are, but I have not done a word-by word comparison.
I'm pretty sure I was told the Aasimar varied significantly between books.

Generally if I were to pick a race for myself, I'd go with the latest published version. But as a DM I rule that as long as a player is using an official 5e publication as their reference, they can use any version.

I know Planeshift is technically unearthed arcana, but I consider those articles to be mechanically robust enough to include in my games. The planeshift races include

Zendikar:
-Kor
-Merfolk
-Vampires
-Goblins

Innistrad:

-Human subraces

Kaladesh
-Vedalken (distinct from the ones from Ravnica)

Amonkhet:
-Human subrace
-Aven
-Khenra
-Minotaur
-Naga

Ixalan:
-Vampires (nearly identical to the ones from Zendikar)
-Orcs
-Goblins (distinct from the Zendikar Goblins)
-Sirens

Dominaria:
-Human subrace
-Aven (identical to one subrace from Amonkhet)
