Does anyone know if someone has already made a stat block for the (https://en.wikipedia.org/wiki/Elasmotherium)se (https://www.dailymail.co.uk/sciencetech/article-6429757/A-three-half-tonne-UNICORN-roamed-Earth-prehistoric-humans.html)? If not, I'll probably be working on one next week...

I'd stat it out as a rhinoceros (SRD), increase size by one category to Huge (with resultant size-based modifiers), and advance the Hit Dice to, say 24. Basically, the maxed out advances from the SRD rhino. Strictly speaking, real-world examples were on the upper end of large though (up to 12 HD on the SRD).

Huge animal, 17 HD, AC 21. CR 9.

No entry in the update booklet, should be good to go.

A quick search also turns up the Elasmotherium (Elite Rhinoceros) (http://www.giantitp.com/forums/showsinglepost.php?p=22645958&postcount=7), though it may well not be what you're looking for.
