Wild shape gives a bonus to strength and negative to dexterity depending on size of creature. What happens if you have items or buffs that already affect those stats?

Different bonus types stack.

To expend on Rynjin's answer - wild shape provides Size bonuses (and penalties.) Magic items that boost ability scores most commonly do so via Enhancement and Inherent bonuses. The types are different, so you can generally benefit from all three.

The other relevant rule is that items that provide constant bonuses (other than armor and shield bonuses) keep functioning during wild shape, even if the relevant slot doesn't exist in your new form. Most items that provide ability score boosts work this way, so their magic continues to apply.
