I have a party member who is a Tabaxi and we like to mess with him all the time with cat jokes. Think I can use the "harmless sensory effect" bullet point on prestidigitation to create a moving red laser pointer dot on things to get him to chase it?

You can make things taste/smell/feel however you want for an hour. I don't think that a red illusory dot on the wall is going to make the spell overpowered.

I'd say far more useful, if you have a Tabaxi to play with, if "Nonmagical trinket or an illusory image that can fit in your hand". That way, the dot can move about for a turn, disappear, then reappear elsewhere (when you create it again next turn).
