So what else out there can besides picking pockets can sleight of hand do in Pathfinder? I'm looking for anything 1st or 3rd party, but not spheres of power

Drawing a hidden weapon is probably the most useful aspect, as you can palm a weapon and have it drawn before combat starts. Sneakily pulling your blaster from under the table without tipping people off kind of thing. Great for smokesticks, flashbombs, etc.

Hiding things on yourself or in extra-dimensional pockets is as important as filching them, and another use of slight of hand.

Lastly, you can use it as akin to the perform skill to busk on the streets by performing ledgermain, juggling, 5 finger filet, card tricks, etc.

Sleight of Hand is the associated skill of the Tempest Gale martial discipline from Path of War, which allows you to pull off all kinds of ranged combat maneuvers and other neat tricks.

Sleight of Hand is the associated skill of the Scoundrel sphere, which is from Spheres of Might (not Spheres of Power). The Scoundrel sphere offers a lot of different uses for its associated skill.
