We have a fighter in our party who needs to meditate for 3 days starting on a full moon (in 2 days game time) but only has a con score of 10...does he stand a chance of doing this without passing out or do we need to bump his con somehow

Actually....there's no listed penalty for ignoring Long Rests. There is literally no rule that exists that says that you get Exhaustion or decreased Constitution scores, or anything like that.

Additionally, the food rules state:
"A character can go without food for a number of days equal to 3 + his or her Constitution modifier (minimum 1). At the end of each day beyond that limit, a character automatically suffers one level of exhaustion. A normal day of eating resets the count of days without food to zero."

The worst case scenario is that he doesn't get his Long Rest benefits, which includes some features and the regaining of HP and Hit Dice, but doesn't mean much for a Fighter who's at full HP. Your DM can houserule whatever he wants, but unless we know those rules we can only tell you that his low Constitution doesn't mean anything.

The real question should be...Why does a Fighter have 10 con?

I thought Xanathar's added rules for not sleeping?

Regardless, it would just add exhaustion levels each day and you don't die until you get up to 6 or something. So he'd have a rough time immediately after the meditation, but it wouldn't kill him.

There are rules for this, they are just in Xanathar's Guide to Everything not a core rulebook.

Going without a Long Rest

A long rest is never mandatory, but going without sleep does have its consequences. If you want
to account for the effects of sleep deprivation on characters and creatures, use these rules.
Whenever you end a 24-hour period without finishing a long rest, you must succeed on a DC 10
Constitution saving throw or suffer one level of exhaustion.
It becomes harder to fight off exhaustion if you stay awake for multiple days. After the first 24
hours, the DC increases by 5 for each consecutive 24-hour period without a long rest. The DC
resets to 10 when you finish a long rest.

So assuming he failed all of these checks he would still be fine. He would just need rest afterwards to return to full fighting efficiency. Now if your DM is using house rules instead of the ones listed above from Xanathar's then, as stated above, we would need those to give a more meaningful answer.

If its sort of a religious/self discovery/enlightment thing, the player should first decide if he wants to be aided in this at all. For instance if I was having to attone for breaking an Oath in that manner, I probably wouldn't buff myself for doing it.

Plus, even if by rules the pally may face no problem, your PCs don't know that (unless they use some divination), so if he's in for being helped just help however you can, regardless of if its necessary or not.
