How would you go about statting a Wendigo in 5th Edition?

I am interested in running a Native American themed campaign, and I was hoping to incorporate one of the beasties. Not sure where to begin though.

Thank you, this is pretty good for a start. I mostly just wanted to avoid crunching all the numbers; now I can get around to adding any fluffy stuff I need.

Have you looked at the Bheur Hag in Volo's guide to monsters? When I was reading it I picked up on a lot of lore that I suspect was inspired by concepts drawn from the wendigo.
