Hi I was scratching my head over the question of, whether you keep your subtype when you gain an undead template like vampire, lich, or gravetouched ghoul? For example could you be a were-wolf lich and still be capable of shape shifting?

Unless the template says you lose any previous abilities, you keep them.

A werewolf can become a lich, and in doing so can still take alternate forms and keeps all the other werewolf traits. A lich who isn't a werewolf can't become one though, because undead type is immune to disease/curse of lycanthropy. Things can stack, as long as they are applied in an appropriate order.
