What are some of the best classes; 3rd party, homebrew, whatever? I'm looking to have a roster of unique classes for a campaign I'm working on, and the 1st party material just isn't providing the inspiration I'm looking for.

I especially want to find some non-caster classes that can actually do stuff beside wear heavy armor and hit stuff.

There's about 50 some-odd base classes in 1st party material alone, I'm not going to try and count the PrCs. What exactly is you're looking for that those aren't meeting? Have you tried the ToB for martial classes that do more than wear armor and hit things?

Yes. So the main issue I'm having as I look over some of the classes is an overtly fantasy feel. Right off the bat this game won't include incarnum, psionics, or casters (except some fixed list casters).

I'm looking for things that feel a little more medieval gothic (best way I can think to describe it) than medieval fantasy. I'm not against the inclusion of magic, but there will be no generic casters with access to full spell lists. Only classes with niche casting, like the beguiler and warmage.

It's hard to answer, since it's not totally clear if you're looking for different mechanics, re-skinning of classes, or re-balancing of casters/mundanes.

Anyhow the classes of the tome of magc could be a good place to start.

There is a lot of homebrew regarding the truenamer, and the original author of the shadowcaster homebrewed a new version of his own class here: http://www.enworld.org/forum/showthread.php?184955-Shadowcaster-fixes-by-Mouseferatu.

Maybe you could try looking into some other nominally d20-compatible things? d20 modern and derivatives might have stuff with less magic, especially if you find some games made for settings that are generally low-magic.

You could look at the 3.0 Rokugan books: in that setting, Magic is almost exclusively restricted to the Shugenja class, the Bloodspeaker class, and a couple of Ninja PRCs with Shadow magic. Most of the classes not built around those 3 facets in the setting are strictly martial, and most the rest have only a smattering of of (Su) stuff.

Iron Heroes is a D20 system that pretty much has "no magic" as its primary design aspect. There is a magic user class, but it's in a different section of the book.

Might be worth a look.

Oh c'mon, there's a fair amount of humor in there too...you can find an occasional combo of a gem.

If you don't want the Tome of Battle stuff - Pathfinder has martials who do a pretty good job of pulling their weight until the highest levels.

In Pathfinder the Unchained Monk, Barbarian, and Unchained Rogue all fit the bill pretty well, especially with some archetypes mixed in.

I haven't actually used them, but the Path of War classes for Pathfinder (they're 3rd party) look pretty good.

Pathfinder's Slayer & Swashbuckler are also fun, though not exactly top tier. (Swash is good with the right archetype & a 2 level Paladin dip to get solid saves.)

No there are definitely some good ones, but a lot of them are "tired" in my group because we've been playing for 20 years. I wanted to see if I could find some fresh classes for my martial minded players to try.

Going to reiterate the 3.0 Rokugan books-there are dozens of PRCs spread across the setting books, most of them Martial or Skill Monkey; and a new Ninja base class with full BAB, full Sneak Attack progression, and a number of speed and stealth based abilities that better fit the non-mystical Ninja archetype compared to the one in CA. There is also a wealth of new martial feats; plenty of crap, but a fair few martial feat chains to try out if you are willing to invest some Samurai levels.
