The Mage of the Arcane Order and Watchful Order of Magists and Protectors prestige classes suck up too much of a wizard's identity and offer too little in return. The spellpool is an interesting feature, but it is by no means awesomely powerful. Characters wanting access to a spellpool are expected to commit ten levels to a prestige class that has many drawbacks. Here is an alternative, the Order of Thaumaturgy. A simple and flavorful 3 level class.

.

Your Guilder could theoretically gain access to 7th level spell-pooling 6 levels before ever even seeing 8th level spells. This doesn't make sense.

No, they can't. If the guilder has no slots for 7th level spells, they don't have access. The spellpool isn't restricting that access, it is their own capabilities preventing them from accessing that level of the spellpool.

Main post updated. Removed order sight because it had a serious exploit. Replaced it with order amity, which does what I intended much better anyway.
