If you have levels in both shadow monk and shadow sorcerer, if you cast darkness using ki, can you see through it as if you had cast it using sorcery points? RAW probably no, but it doesn't feel right.

You have the right interpretation here. In fact, Shadow Sorcerers can’t even see through their own Darkness if they cast it with a spell slot; which I think is even weirder.

Yeah shadow sorcerer as a whole is kinda wonky. I made a post on Homebrew about changes I would make.
