Just looking for clarification as to rules for sundering a hydra's head off.

The monster manual says you can do it, but the players handbook goes on about objects.

I'm assuming that unless the person in question has improved sunder, the hydra gets attacks of opportunity but effectively going for an aimed shot, does that have minus to hit?

Thanks in advance

Specific beats general, so because the hydra rules specifically say you can sunder a head, that beats the general rule saying you can only sunder objects.

You take the normal downsides of sundering if you lack Improved Sunder and enjoy the normal benefits if you happen to have the feat. (You’ll also notice that the hydra rules specify that sundering provoked unless you have IS.)

The rules don’t say there’s a to-hit penalty to target a head, so there isn’t a to-hit penalty. But the rules do say you have to declare you’re sundering in advance.

Cool, great!

any other rules that are needed to know? apart from IS I mean.

the AoO comes before Sunder attempt, but does the head count as a weapon? (so that its ann opposed role) or does it count as a worn item? (so that its an attack vs hydra's ac)
