Some spells get stronger based on caster level like more damage dice. Are there any spells out there with effects that get stronger based on your casting stat that isn't just spell dc?

There are a whole bunch of spells which determine attack rolls (and related values) from your casting stat - e.g. Bigby's Grasping Hand which uses the casting stat for attack and grapple.

Spiritjaws uses your Wisdom modifier to attack. It's a great spell.

Thunderlance, creates a Force lance ... or long stick or spear or something ... that uses your INT or CHA as its attack rolls.

Good old Spiritual Weapon uses your BAB and WIS modifier for its attack roll.

Steeldance is a 3rd level spell that animates two bladed weapons to fly around you and attack as free actions once per round. They attack with CL+Stat and deal normal damage for the weapon + Stat as if it were STR. If you have a very high casting stat, this is a good investment for more attacks in a round, or even defensively as they use free actions instead of being part of a full-attack.

Steel dance and thunder Lance are perfect examples of what I'm looking for, caster stat for hit and damage. The bigby spells can be useful too.
