I know are ways to do this, but I can't remember them, any help?

There's the Arrow Deflection enhancement for shields, the Quarterstaff of Battle (MIC), the Staff of Alacrity (ELH) and iirc one or two staves in one of the FR books that have it as a special ability.

The duelist prestige class can do it, I believe.

The Block Arrow feat (HoB) allows you to use a shield to deflect missiles: if you use one of the shields that also counts as a weapon (shield slam, shield spikes, Dwarven buckler axe etc.) then you are technically deflecting arrows with a weapon.

Wall of Blades (Iron Heart discipline, 2nd level maneuver) from Tome of Battle allows you to deflect any attack that has an attack roll, including arrows, targeted ray/ranged touch spells, and maybe even some other stuff. If it involves an attack roll to hit you, it's fair game.

You can grab it by either dipping Warblade 1 at 5th level or higher, or by picking up the Martial Study feat at 5th level or higher. Alternatively, you just can be a Warblade of 3rd level or higher.
