I am trying to run Descent into Avernus in the future and I would like help on adding some trick and clauses to the deals. What could be deals that could lead into interesting rp and/or conflict.

One of the best ways is to play on the character's lack of knowledge, make a deal that seems to align with their beliefs that would require them to harm a good-aligned entity. Some examples:

Destroy the former weapon of the ruler of the first layer of hell
Destroy the companion's power source
