Early level Roc Training

So the ranger in my party wants to rear a Roc. We are level 5. Either that or convince them to at least foght for us against a dragon cult. Our DM has given her land as a quest reward and she wants to turn it into a Roc preserve for their aid. I'm a fairly old hand here, but this has me thrown for a loop. Any insights?

However, you'll have to determine how long it takes a Roc to grow from egg to combat sized in your world, a period of years not days, and the game will have to pause for that long if they want to end up with combat rocs.
