Oddly my groups have not fooled with Haste much.

How does it interact with a Ring of Spell Storing? Meaning can a Wizard with Haste on him cast a Cantrip as his Action then thanks to Haste use his Ring of Spell Storing to cast whatever 1 Action Spell is in it?

Ring of Spell Storing is not a use object action, it allows you to cast a spell. Haste doesn't allow you to cast a spell using your hasted action.

From the DMG:

If an item requires an action to activate, that action isn't a function of the Use an Object action, so a feature such as the rogue's Fast Hands can't be used to activate the item.

From the DMG:

The issue is that it doesn't even use your action to "activate" the Ring of Spell Storing, simply being attuned to the item grants you the ability to cast the spells it has stored in it. You can store bonus action and reaction* spells in it as well.
*This is possible, just tedious. The trigger for a reaction spell has to occur before you can cast it so to store Shield, for example, you're going to have to be attacked while touching the ring.

There is no action use associated with the Ring, only with casting the spells inside it.
