I know the Azurites in OOTS have referenced the Southern Pantheon which is analogous to the Chinese Zodiac, but is there any precedent for this in D&D?

Specifically, I want to introduce "Dog" and "Rat" into my 5e campaign based on recent events in our game.

I know some of the Azure City arc is based on the cringily titled supplement "Oriental Adventures" but I couldn't find anything specifically about deities in my skimming of the PDF I found.

It wouldnt be too hard to figure out a domain and throw some flavor in there based on actual myths, but I didn't know if it was already a thing published somewhere.

Anyone know anything? Or if it will end up being homebrew, anyone have any insight?

Might the Digimon Deva hold any appeal as a basis?

Mödley Crüe: Just a reminder that real-world religions are not to be discussed on these forums.

For 5e you're on your own, however check out On Hallowed Ground (2e) or Dieties & Demigods (1e, 3e). Ultimately the answer is, yes, by canon they're incorporated.
