I read a thread suggesting you could ride a cow and this would be OP

it just shows:
- the cow was not trained for riding
- the woman had insufficient ranks in ride
- the lack of saddle imposed a -5 penalty.

the last point is of special importance: you can make an exotic saddle to ride exotic animals, so you can ride practically anything with the right saddle.
you could train a crocodile for riding and do it with a special saddle, too.
