So I'm not sure if I'm remembering incorrectly but I remember a class other than ocular adept that caused you to gain similar abilities to a beholder and I for the life of me can't find it or maybe I'm wrong and it doesn't exist... Does anyone know of a class like that?

There's a book by Keith Baker from Goodman Games called "The Complete Guide to Beholders" and in addition to neat lore stuff and a bunch of beholderkin, it also has a 20-level beholder cultist class that you can take, slowly growing eye stalks more eye stalks and picking what they do as you level up. Is that it?

Beholder Mage.

requires you to be a beholder, doesn't turn you into one or give you similar abilities.

The only other one (besides Ocular Adept) I could think of was Fleshwarper. Doesn't give beholder abilities itself, but allows you to get Beholder grafts (which do give you beholder-like abilities) more easily.

Oh if pathfinder material is relevant to you at all, Samurai Sheepdog's Book of Many Things includes the aberration Skaldak (https://www.d20pfsrd.com/races/3rd-party-races/samurai-sheepdog/skaldaks/) race, who have access to an Invoker (https://www.d20pfsrd.com/classes/3rd-party-classes/samurai-sheepdog/invoker/) prestige class (https://www.d20pfsrd.com/races/3rd-party-races/samurai-sheepdog/skaldaks/idolator-invoker-skaldak/) that allows them to turn into floating heads with eyestalks that shoot out spells,an eyedolor.

Edit: not prestige class, archetype, mea culpa.

Sadly the online articles are down, but there's also Eye of the Xanathar - a FR Beholder themed PrC that grants some Beholder-like abilities.

If Savage Species cheese is allowed, a druid with the feats Aberration Wildshape and Assume Supernatural Ability(Eyerays) is going to be hard to top by any prestige class.

The way I'm reading it, all the different eyerays your form has fit under the same listed Supernatural Ability, so would be covered by a single feat. If you were super pushy you could argue that the feat would further allow this for any Beholderkin you wildshaped into since its the same ability used by different forms.
