I’m probably going to feature yuan-ti heavily in my Pathfinder game, and I’m looking for more information on them. What 3.0 and 3.5 books have the most useful lore, fluff and mechanics for these terrfying serpent folk?

The 3.5 supplement Serpent Kingdoms (https://www.amazon.com/Serpent-Kingdoms-Roleplaying-Forgotten-Supplement/dp/0786932775/) should be your first stop, since that has about ten pages of detailed background on their history, society, magic, politics and half a dozen major noble houses, as well as details on where they like to lair, plus several pages on their primary deity, etc.

I'm sure there's information in other sources, but Serpent Kingdoms is probably the best option for what you need.

In addition to SK, which is likely to be by far the best resource... but the Slayer's Guide books are usually pretty good, especially for fluff. 3rd party, but they are decent quality.
