When the enemy wizard casts a Fireball...

The wizard and sorcerer counterspell it. So does the bard, because Magical Secrets.
The rogue and monk Evade it.
The barbarian, fighter, ranger, and paladin have a lot of hit points; they can wait it out.
The cleric and druid heal themselves afterwards.
And finally, the warlock...
...the warlock, um...
...so that's why they call it a dip!

Well ... counterspell is also on the warlock spell list if they happen to have a spell slot available ...

Armor of Agathys? Or just not being near the front line and staying away from the rest of the party blasting away with eldritch blast.

There are options.

Tome of Levistus is available to everyone.

You can use Gift of the Ever Living Ones to improve any healing effects on yourself, including any you may have gotten from Celestial Patron.

You can also get False Life as an Invocation to artificially increase your HP.

Consider that the difference in HP between a Fighter and a Warlock is about 2 HP + 1 per level. At level 5, that means about 7 hitpoints, less than the amount False Life gives you per cast.

How to respond to an AoE:

A) High 5 the Paladin
B) Shake the Paladin's hand
C) Salute the Paladin
D) Unleash another Fireball on your own position

Figuring the Bard and Wizard would use their slots on Counterspell, if that doesn't work the Warlock lets loose a level 4 Hellish Rebuke as a Bonus Action and then uses the standard Eldritch Blast on her turn?

Smart wizards fight smart. Unless there is a real reason to stick around and fight the Interlopers head on they will retreat and regroup. Counterspell is brutal but it also has a pretty short range and needs sight.

Dispell is more brutal if the wizard loves buffs to stay ahead.
