Without going through all the books (don't have all of them anyway so I might miss some) what other types of lizards are out there that are "official" not homebrew. I found a couple homebrew and they are crazy.
Desert, jungle and arctic (if there is such a thing) are mainly what I'm looking for.

I think the underdark supplement has some... Nope they just mention lizards 28 times.

I definitely remember underground lizard stats in a forgotten realms book tho

Yup - Forgotten Realms Campaign Setting has stats for Pack Lizards, Riding Lizards, and Spitting Crawler Lizards. I think Drow of the Underdark also does.

Sandstorm has stats for Giant Banded Lizards and Horned Lizards. Being tiny, Horned Lizards are usable as Familiars and as 1st level Animal Companions.

Stormwrack has stats for Mosasaurs, which are in the "lizard" (Squamata) clade - though, as an early offshoot, they may be slightly closer related to snakes than to the rest of the lizards.

personally I just take monitor lizards and boost them to large

At least in the novels, riding lizards are more like giant geckos - walking on ceilings/cavern roofs, with their riders remaining in place through being strapped to the saddle.

Ophidians, despite their name, are lizards.

Drow of the Underdark has a few giant lizards, each with some neat features.

Being sapient though, they're more like lizardfolk than lizards - which the OP has ruled out.

do dinos count? Eberon has them all over in the books....well, the campainge setting for sure.
Monster manual 3 has the battletitan, a CR 14 huge dinosaur.

Chameleon Creature template (Underdark) can be added to any corporeal creature except a construct, undead, or elemental

How about some amphibians - i. e. newts and salamanders?
There (http://archive.wizards.com/default.asp?x=dnd/mm/20030920a) are Dragon Newt and Titan Salamander (both also have their psionic versions)
Monster Manual II have Frost Salamander (which isn't Outsider, but Magical Beast with Int 6)
Loona: Port of Intrigue have Bolnewt (CR 1/6 Tiny Animal)

j/k. I know I said no lizardmen. Just found this cool pic of The Lizard. At least I think it's cool. Not looking for any humanoids. I do remember the Shocker Lizards now that you point them out. They might work somewhere. Gonna be a lizard-fest. lol. Oh yea the Frost Salamander might work too. And the Fire Salamander.


But as for the lizards, I took a Winter Wolf and just changed the name to Frost Lizard. I need to find a lizard that will be in the desert and spit acid.

Dinos are lizards. If we disregard the main categories, here are some lizards I can think of:

Lizard familiars
Shocker lizard
Frilled lizard.
Giant Lizard
Monitor Lizard.
Riding Lizard

Those are the ones I can remember off the top of my head.

For a desert lizards, you can't go wrong with the Dark Sun: Dungeon ##110-111 have some monsters (see the picture (https://i.pinimg.com/originals/eb/39/7e/eb397e7bb719f5d826877b0da00b366c.jpg)) - such as Critic Lizard, Crodlu (and Heavy Crodlu), Inix, Jhakar, Lirr, Mekillot (:belkar:), Sand Howler, and Z'Tal; also, some creatures aren't explicitly called "lizards" or "reptile", but pictures show them in at least maybe-reptilian way - such as Baazrag or Fordorran...

MM1 has a boring Medium lizard that's worse than a Crocodile, and the tiny lizard for familiars.

Arms and Equipment Guide has a fairly fragile Large riding lizard with Spider Climb.

Forgotten Realms Campaign Setting has a tiny acid spitting lizard, and the Large pack and riding lizards. They have no super abilities.

The Forge of Fury has a Large lizard with some chameleon bonus and a tongue grab. It has no other super abilities.

Drow of the Underdark takes the lizards from FRCS and the Forge, and turns them into ridiculous uber monsters, imo. Kinda fun in their ridiculousness, but yeah.
