As the title says why did 3.5 get rid of rogue's all encompassing dagger proficiency when switching to 3.5? It's not like it breaks the game letting them be proficient with all daggers in the game...

There are two daggers in 3.5: "Dagger" and "Dagger, punching". Both are classified as simple weapons, which "Anybody but a druid, monk, or wizard is proficient with all simple weapons." cite: d20 SRD (https://www.d20srd.org/srd/equipment/weapons.htm).

The only other daggers I remember in 3.x were the whip dagger and the kukri. The Kukri was classified as "Exotic" under 3.0 (so even fighters needed a feat to be able to use them), and were then moved to "Martial" in 3.5.

There's also the barbed one in Complete Adventurer.

There are the Dagger, Punching Dagger, Barbed Dagger (CA), Disguised Dagger DR#316, Ribbon Dagger (DU#118), Whip-Dagger (DU#134/ DR#353), as well as Kukri, which as mentioned are considered a martial weapon.

Dagger and Barbed Dagger specifically shares focus, so you are proficient in each... That are all the daggers I could find. There might be more...

Also Tripple dagger (A&EG) and drow long knife (SoX), I think janbiya is located somewhere too.

This handbook lists quite a few more interesting D&D 3.X daggers: A Subtle Knife (https://forums.giantitp.com/showthread.php?596810-The-Subtle-Knife-Options-for-Players-and-DMs-using-the-Dagger)
