Is there any easy way to switch a ray to a melee touch?

To what end? To allow flanking? To use strength for the attack roll?

Yes, yes, and to avoid any sort of ray deflecting

Duskblade 3 gets you close. Nothing disqualifies a ranged touch spell from being channeled, I believe.
If you're open to PF, there's a Magus arcana that does it.
Those are the best I could think of...

I think you could probably bootstrap a low level answer by combining spell storing weapons with any number of means to make a normal melee attack a touch attack. (Emerald Razor, Deep impact, Impaling weapons, etc)

Enlightened Fist 7 does it via hold ray.

Ordained Champion 3. Any spell, including rays.

Well, yes there is. The fact that a Duskblade can only channel touch spells. Ranged Touch isn't the same.
