Digging through ye ancient tomes of necromancy, I stumbled on the Juju Zombie in Unapproachable East. It's a pretty solid template for creating undead, and you can make one from any dead creature with an intelligence score with create undead. It keeps class levels and other features and the only downside is a -4 int penalty, and gets some goodies like natural armor, str and dex bump, immunity to electricity for some reason, a climb speed, blah blah blah.

So why's it interesting? create undead is usually considered a pretty bad spell because it provides no native control mechanism. But the Juju Zombie description contains the following:

Animated by a particularly hateful brand of necromancy, juju zombies are malicious, murderous creatures enslaved by the mighty spells that created them.
...
A juju zombie free to do as it wishes is a bloodthirsty thing, driven to destroy the living and bring woe wherever it wanders.
The description seems to strongly imply a juju zombie create through spellcasting is not free. Furthermore, the fluff indicates that juju zombies are servants of Thay and fight on the frontlines in their wars. However the template provides no specifics on the extent of this control, if there even is any. Anyone have any thoughts or further information about this template?

Well, obviously the spell enslaves them, not the caster :smalltongue:

One of Eberron's Living Create Undead could go nuts (provided it would know how to create the Faerunian undead), otherwise tough luck.

I do not even know what kinds of orders create undead would give but since it is evil aligned it probably gives evil orders.
