Two questions:

The Hex Warrior states that you can use your charisma bonus in place of strength or dexterity on a melee weapon that lacks two handed. Does that include versatile weapons that you use two handed? (first question)

Secondly, the Pact of the Blade states that "You can transform one magic weapon into your pact weapon by performing a special ritual while you hold the weapon. You perform the ritual over the course of 1 hour, which can be done during a short rest.".
So if you happen to have a +2 Great sword lying around you can turn that into your pact weapon.

Now the Hex Warrior also states that "If you later gain the Pact of the Blade feature, this benefit extends to every pact weapon you conjure with that feature, no matter the weapon's type."
Which means that if you use pact of the blade to create a weapon, it can be a great sword and you can use your charisma modifier on it. BUT, if it was a magic weapon that you turned into pact weapon does that still count?

Can a hexblade with pact of the blade turn a +2 glaive into their pact weapon and use their charisma bonus in place of strength? (second question (: )

"Two-handed" is a weapon property; "versatile" is a different weapon property, so versatile weapons are an eligible choice.

Yes. "Pact of the Blade" is meant to allow an Hexblade Warlock to use any weapon: for example, you could use a longbow or crossbow as your pact weapon.

For the first question, it doesn't. By this I mean it doesn't stop you from using Versatile weapons- Versatile and Two-Handed are different properties. Compare this with Dueling that asks you to attack with one hand only (thus forbidding the use of a Versatile weapon wielded two-handed).

For the second question yes it still counts. You still conjure your magic-weapon-turned-pact-weapon so there's not even any issue with the wording.
