So, if I have Gift of the Ever Living One, and I use certain spells that are "roll damage, heal same amount/half/double" like Vampiric Touch or Enervation, are the damage dice automatically maxed? Or just the amount of hit points I gain for healing?

I dont think it would max the damage dealt, juat the healing (if it’s variable)

None.

GotELO maximizes dice rolls "to regain hit points". Vampiric touch has your roll for damage, and then you regain hit points equal to half the damage DEALT, not half the damage ROLLED. If that were the case an argument could be made, but its not.
