Sorry, I was editing while you posted.
I should have said Plants rather than Fungus.
There are not many choices, its about mostly about flavor.
Many of the forms do have some kind of grasping limb.
I added the Undead question, those forms might be more varied and potentially unbalanced.

It took me a while to find a decent list.
There are a lot of forms that can wield weapons, which might be OP, given I'm gonna want to do that anyway.

The Spore Servants are beasts , humanoids, etc. transformed with a template
Sticking with the listed could avoid OP flexibility.

The only thing I see that could be an issue is that there is a lot of Blindsight out there, some out to 60 feet. That is fairly powerful, but otherwise I don't think it is all that broken since you are giving it to a Spore Druid instead of a Moon Druid.

For situations like this you should give a white list of allowed Plants instead of just allowing everything. For example, DNDBeyond lists Lifferlas as a CR0 creature, there is no way this is a CR0 plant.



As for undead, that is a hard no. There are undead that can cast, undead have immunities to spells and conditions that could make a huge difference in a party.

Shows how much I play druids, which is never!
The closest I've gotten is playing a dwarf Nature cleric, MossyToes.
He was great fun , so thats why I'm considering the Spore Druid.
Maxing out at CR 1 will make the white listing easier.

As for undead, that is a hard no. There are undead that can cast, undead have immunities to spells and conditions that could make a huge difference in a party.
Looking at undead of CR 1 or less, the list isn't actually that bad. The only things that jump out as problematic are the handful of critters like Shadows and Husk Zombies that turn their victims into more undead, and low-level access to insubstantial forms. Both of those are easy enough to fix with a line of text in the ability description. With that done, I think you're actually fine, especially when you consider that a non-Moon Druid is really only getting utility forms from Wild Shape.

Plants are actually worse-- things like the Mycanoid Adult (or worse yet, the Tri-Flower Frond from ToA with its "save or be unconscious for an hour, new saves every MINUTE) have some nasty save-or-lose abilities. You'd probably have to add a clause about not getting special attacks.

All in all, for a largely thematic ability, you're probably best off going with a whitelist.

A living creature wild shaping into an undead would seem very strange to me.

I would ban spore servants for this reason. They're basically undead with the plant typing.

Spore Druids actually create undead with one of thier class abilities.
Undeath is considered a part of the natural cycle of birth, death and rebirth
Temporarily becoming one seems right up thier alley, and entirely thematic.

That said, the powers of actual undead might be problematic, as already pointed out.
